Foxwoods CEO Jason Guyot shared insights about the restaurant’s inception. “In late 2022, as we emerged from the pandemic, we analyzed how to invigorate the resort experience,” he said. The plan was not just to collaborate with notable chefs but to align with remarkable brands like Stewart’s. The result? A vibrant destination that beautifully combines Stewart's culinary excellence with the rich history of the region. As Stewart herself noted, her decision to bring The Bedford to Foxwoods is closely tied to her deep respect for Native American culture, stemming from her roots in New Jersey, which is home to the Lenni Lenape tribe.

The Bedford restaurant is a feast for the senses, seating up to 204 guests in a stunning environment that melds elegance with warmth. The interior features bright, airy spaces, adorned with white marble floors and minimalist decor that enhances the sophisticated atmosphere. Guests are greeted by images of Stewart’s earlier modeling days as they enter, setting a captivating tone for their dining experience. An open kitchen at the back of the restaurant allows patrons to witness the artistry behind each dish, further connecting them to the culinary process.
Stewart’s vision extends to a unique private dining area called the Green Room, designed to mirror the ambiance of her Farmhouse. She even mentioned that if her farm overflows with fruits or vegetables, she happily contributes them to the restaurant’s offerings. The creative cocktail menu features drinks like the Martha-tini—crafted with Zubrówska Bison Grass Vodka and sweet vermouth—and the Class Martha-rita, infused with fresh lime juice and silver tequila, promising a unique twist on classic beverages.

The grand opening of The Bedford was celebrated with a star-studded red carpet event that underscored Stewart’s prominence in the culinary and entertainment worlds. Celebrities including rapper 50 Cent, Olympian Johnny Weir, and model Christie Brinkley graced the scene, adding to the glamour of the occasion.
